Apple and coconut cake


For a 24 cm round cake pan or 26 cm long baking tray

600 g SweeTango apples
2 dl of apple juice
1 lemon or lemon with untreated peel
150 g of soft butter
125 g of sugar
1 pinch of salt
3 eggs
100 g coconut flakes
150 g of flour
1 teaspoon Baking powder

Powdered sugar for dusting



Peel and core the SweeTango apples, then cut them into 1/2 cm thin slices. Grate the lemon peel finely, squeeze out the juice. Bring the apple juice to a boil, add the lime zest and add the lemon juice. Add apple slices, simmer for 3 minutes, stirring now and then. Drain the apple slices in a sieve and collect the liquid.

Mix butter with sugar and salt. Add the eggs one after the other and mix to a frothy mixture. Add coconut flakes, flour and baking powder. Fold in apple slices. Pour the dough into a buttered baking tray.
Bake at 180 degrees for about 45 minutes.

Drizzle lightly with approx. 1/2 dl of apple juice. Dust with powdered sugar.
